All of that is main deck he just has the sideboard hidden. Look at the bottom of the screen where it says sideboard 15/15. Also at 2:50 he talks about the lands.

Yes, the fetches where all in the main. It only looks as if there are in the sideboard because he organized the cards in a specific way which is different from the “default” view used by the client software. You can see that the Sideboard is hidden at them bottom of the screen.
